Apple Walnut (Birthday) Cake

Makes one two-layer 9-inch cake or three-layer 8-inch cake

½ cup butter (1 stick)

1¾ cups sugar

½ cup vegetable oil

1 tsp vanilla

3 eggs

3 cups flour

1½ tsp baking powder

½ tsp baking soda

½ tsp nutmeg

1 TBL cinnamon

1 cup buttermilk

2-3 apples (250g)

1 cup walnuts

Preheat oven to 350 degrees. Lightly grease two 9″ (or three 8″) cake pans and line the bottoms with parchment paper. Flour the sides of the pans.

In a medium mixing bowl, whisk together

  • 3 cups flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp nutmeg
  • 1 TBL cinnamon
  • ½ tsp salt

In a stand mixer, mix until smooth

  • ½ cup (1 stick) butter, slightly softened

Add

  • 1¾ cups sugar

and mix at medium speed for 3-5 minutes or until light & fluffy. Add

  • ½ cup vegetable oil
  • 1 tsp vanilla

and mix until blended. One at a time, add

  • 3 eggs

mixing until the yellow of the yolk disappears. Alternately add the flour mixture and

  • 1 cup buttermilk

Begin and end with the dry ingredients (3 additions of dry and 2 of wet). At middle speed, mix until just combined, do not over mix.

Peel then grate on large holes of a box grater

  • 2-3 apples (250g)

By hand, mix the apples into the dough along with

  • 1 cup walnuts (125g), chopped

Pour into the prepared pans and smooth the tops. Bake at 350°F for 25-30 minutes or until a toothpick inserted in the center comes out clean or with just a few crumbs attached. Let cool 10 minutes, then turn out of pans.

Frost with a maple syrup version of the Cooked Flour Cake Frosting and top with maple syrup glazed walnut halves, or whatever frosting you want.
